Veracruz Tilapia

Did you know... it is high in protein of high biological value. Protects cells from aging and prevents heart problems.

Ingredients:

500 g of tilapia
1 tablespoon olive oil
1/2 cup chopped onion
2 teaspoons minced garlic
2 natural tomatoes cut up into small cubes
1 medium green pepper, julienned
2 jalapeno drained
1/2 teaspoon salt
1/2 teaspoon pepper
3 dried bay leaves
1 teaspoon dried oregano leaves
1/4 cup chopped fresh cilantro
1/2 cup pimento stuffed olives
1/4 cup capers, drained
1 tablespoon butter (or margarine)

Cooking:

1 Heat the oil over medium-high heat in a small saucepan and add the onion and garlic. Cook, stirring constantly, until
   soft.

2 Heat to boiling and add the tomatoes, green peppers and 2 jalapeños. Kitchen uncovered 2 minutes, stirring constantly, until
   vegetables are slightly softened.

3 Add the salt, pepper, bay leaves, oregano and cilantro. Cook for 8 minutes more, stirring constantly.

4 While the oven is heated to 280°, add the olives and capers. Cook for 5 more minutes, stirring occasionally, until the
   the vegetables are soft.

5 Heat butter over medium-high heat in a skillet and cook the fish in butter until brown golden on each side,
   this will seal the juices from the fish.

6 Pour sauce over fish and bake for 17-22 minutes.
